Chicen in Creamy Peanut Sauce

If you love peanuts, you will love this recipe for chicken in a spicy peanut sauce, prepared with roasted peanuts and various dried chiles and spices. 


Chicken Broth Recipe

Ingredients 

  1. 3-4 lbs Chicken 
  2. 1/2 White Onion
  3. 4-5 Garlic Cloves 
  4. 2-3 Stalks of Celery 
  5. 1 Hoja Santa 
  6. 2 Tsp Salt or to your needs

Add 3-4 lbs of bone-in chicken thighs,  drumsticks, or a combination of both to a stock pot with two quarts of water. Add garlic, onion, celery, hoja santa or bay leaf, and salt for a flavorful broth. Bring to a boil, then reduce heat to low and cover. Simmer for 25-30 minutes or until the chicken is cooked. Once the chicken is done, scoop it out, strain the chicken broth, and set it aside. Reserve two cups of the broth for the preparation of the sauce.

Peanut Sauce Ingredients 


Ingredients 

  • Four Chile Guajillo 
  • One Chile Ancho 
  • 1/2 White Onion 
  • Three Garlic Cloves 
  • 2 Roma Tomatoes 
  • One Cinnamon Stick 
  • 4-5 Whole Cloves 
  • 6-8 Peppercorns 
  • 1 Tsp Whole Cumin 
  • One cup of raw or Roasted Peanuts 
  • Salt or Chicken Bouillon ( I used one TBSP of Chicken Bouillon)
  • 2-3 Cups of Chicken Broth 


Instructions

  1. Cut onions and tomatoes into quarters. Rinse the chiles with warm water, pat them dry, and remove the stem from the chilies; using scissors, cut lengthwise to open them and discard the seeds and veins.
  2. In a medium pan, toast the peanuts for about a minute with frequent movement, remove them, and set aside,
  3. Break down the cinnamon stick into the same saucepan, and add the cloves, peppercorns, cumin, and light toast to enhance the flavor for about 10-15 seconds. Remove them from the pan, add peppers, and toast them for approximately one minute or until fragrant. TIP: Make sure to move them frequently so they don't burn; otherwise, your sauce will taste bitter.  
  4. Using the same pan, heat a small amount of your preferred cooking oil, add the tomatoes, onion, and garlic, and saute for 2-3 minutes or until the tomato begins to wither. Mix the peppers and spices back into the pan with the tomatoes, onion, and garlic. Add two cups of chicken broth; turn off the burner and cover for 15 minutes once it reaches a simmer. 
  5. Once it cools down, transfer everything except the peanuts to a blender. Blend these ingredients until they have a smooth consistency, add in the peanuts, and blend until they are well broken down and incorporated with the sauce. 
  6. Pour the sauce into the pan and add one cup of chicken broth or more, depending on how thick you like the sauce. Bring to a boil, then add the chicken. Simmer for five minutes, taste, and add salt or chicken bouillon as needed. Simmer for five more minutes or until the sauce thickens to the thick gravy consistency. 

Serve Encacahuatado with white or red rice, refried beans, and freshly prepared corn tortillas.



EN ESPAÑOL

Si te encantan los cacahuetes, te encantará esta receta de pollo en salsa de cacahuetes. En México, esto también se conoce como "pollo al cacahuate", "mole de cacahuate" o "pollo encacahuatado". Preparado con cacahuates tostado y una variedad de chiles secos y especias.


Receta para el caldo de Pollo 

Ingredientes:

  • 3-4 libras de Pollo
  • 1/2 Cebolla Blanca
  • 4-5 dientes de ajo
  • 2-3 tallos de apio
  • Una hoja santa
  • Two cucharaditas de sal o según sus necesidades

Agregue 3-4 libras de muslos de pollo con hueso, patitas o una combinación de los dos  a una olla con dos cuartos de galón de agua. Agregue ajo, cebolla, apio, hoja santa o laurel y sal para obtener un caldo sabroso. Llevar a ebullición a fuego alto, luego reducir el fuego a bajo y tapar. Cocine a fuego lento durante 30-35 minutos o hasta que el pollo esté cocido. Una vez que el pollo esté listo, saque el pollo, cuele el caldo de pollo y reserve. Reserva dos tazas del caldo para la preparación de la salsa.   


Ingredientes para la  salsa de cacahuate.

  • Cuatro Chile Guajillo
  • Un Chile Ancho
  • 1/2 Cebolla Blanca
  • Tres dientes de ajo
  • 2 tomates romanos
  • Un trocito de canela
  • 4-5 dientes enteros
  • 6-8 granos de pimienta
  • Una Taza de Cacahuates
  • Una cucharadita de comino entero
  • Sal o caldo de pollo en polvo al gusto 
  • 2-3 tazas de caldo de pollo


Instrucciones 

1. Cortar las cebollas y los tomates en cuartos. Enjuague los chiles con agua tibia, séquelos y quite el tallo de los chiles; Con unas tijeras, córtelas a lo largo para abrirlas y deseche las semillas y las venas.

2. En una sartén mediana, tueste los cacahuetes durante aproximadamente un minuto con movimiento frecuente, retírelos y reservar. 

3. Desmenuce la rama de canela en la misma cacerola, agregue los clavos, los granos de pimienta gorda, y el comino. A fueo bajo, tostarlos ligeramente por aproximadamente 10-15 segundo solo para realzar el sabor., Retírelos de la sartén, luego agregue los chiles y tuéstelos durante un minuto. o hasta que empiezen a solar el aroma. 

CONSEJO: Asegúrate de moverlos con frecuencia para que no se quemen; de lo contrario, su salsa tendrá un sabor amargo.

4. Usando el mismo sartén, caliente una pequeña cantidad de tu aceite de cocina preferido, agregue los tomates, la cebolla y el ajo, y saltee durante 2-3 minutos o hasta que el tomate comience a marchitarse. Mezcle los chiles y las especias nuevamente en el sartén con los tomates, la cebolla y el ajo. Agrega 2 tazas de caldo de pollo; espera a que empieze a hervir, apague el quemador y cubra durante 15 minutos.

5. Una vez que se enfríe, transfiera todo a una licuadora excepto los cacahuetes. Licúa estos ingredientes hasta que tenga una consistencia suave, agrega los cacahuates y licúa otro minuto o hasta que los cacahuates esteb bien desmenuzados e incorporados a la salsa.

6. Vierta la salsa a un sartén  y agregue una taza de caldo de pollo o más dependiendo de qué tan espesa le guste la salsa. Llevar al hervor a fuego medio, luego agregar el pollo.  Le bajamos a fuego bajo  y cocinamos durante cinco minutos, pruebe y agregue sal o caldo de pollo en polvo según sea necesario. Cocine a fuego lento durante cinco minutos más o hasta que la salsa se espese.  Este encacahuatado se acompaña bien con arroz blanco o rojo, frijoles refritos y tortillas de maíz recién preparadas.
