Cactus Salad - Ensalada de Nopales


Ensalada de nopales is delicious, very nutritious, and easy to make. It can be served in various ways, as a stand-alone appetizer, a side dish, or a topping on tostadas or tacos. Nowadays, jars of chopped, cooked, ready-to-use nopales are easy to find in most grocery stores. Most Mexican grocery stores have raw, cut, and ready-to-cook nopales, or if you have prickly pear cacti, cut them before they are fully grown.




Ingredients

  1. 3-4 Cups Diced Nopales 
  2. 1/3 Cup Olive Oil 
  3. One Lime 
  4. One Tsp Salt &  Black Pepper or as needed
  5. One Tsp Mexican Oregano
  6. One Roma Tomato 
  7. Handful of Cilantro 
  8. One Jalapeño 
  9. One Cup Diced Red or White Onion
  10. Queso Fresco 


Cooking Instructions

  1. If using raw nopales, cut them into small pieces and rinse them in a strainer. If using nopales from a jar, rinse them and cut them into smaller pieces if desired. 
  2. Heat the olive oil in a medium pan; add nopales, salt, and lime juice. Saute for 10-12 minutes over medium heat or until you no longer see slime. You can also boil them in water, salt, onion, and cilantro. 
  3. Scoop the nopales into a small bowl, and once it cools down, add the chopped onion, cilantro queso fresco, Mexican oregano, and salt and black pepper to your taste. Mix to incorporate the ingredients and enjoy as a side dish, with chips, or as a topping for tostadas and tacos.

La ensalada de nopales es deliciosa, muy nutritiva y fácil de hacer. Se puede servir de varias maneras, como aperitivo independiente, guarnición o aderezo para tostadas o tacos. Hoy en día, los frascos de nopales picados, cocidos y listos para usar son fáciles de encontrar en la mayoría de las tiendas de abarrotes. La mayoría de las tiendas de comestibles mexicanas tienen nopales crudos, cortados y listos para cocinar, o si tienes nopales, córtalos cuando aun esten tiernos. 


Ingredientes

  1. Tres a Cuatro tazas de nopales picados
  2. 1/3 taza de aceite de oliva
  3. una lima sal y pimienta al gusto
  4. Una cucharadita de orégano mexicano
  5. Un Tomate Roma
  6. Cilantro
  7. un jalapeño
  8. 1 taza de cebolla roja o blanca picada
  9. queso fresco  

Instrucciones

  1. Si usa nopales crudos, córtelos en trozos pequeños y enjuáguelos en un colador.
  2. Caliente el aceite de oliva en una sartén mediana y agregue los nopales, la sal y el jugo de limón. Saltee durante 10-12 minutos a fuego medio o hasta que ya no vea baba. También puedes hervirlas en agua, sal, cebolla y cilantro.
  3. Saque los nopales en un tazón pequeño y una vez que se enfríe, agregue la cebolla picada, queso fresco, cilantro, sal, pimienta, y orégano. Mezclar hasta que todos los ingredientes esten bien incorporados y listo para usar como guarnición, o como aderezo para tostadas y tacos.
