Spicy Salsa Macha - Oil-Based Salsa

Spicy Salsa Macha
Spicy Salsa Macha

Looking for a way to add some delicious flavor to your favorite dishes? Look no further than this fantastic salsa! Made with a mouthwatering combination of garlic, peanuts, sesame seeds, and chiles, it's the perfect way to elevate your morning eggs, quesadillas, tacos, soups, and more. Whether you prefer mild or spicy food, this Mexican recipe is customizable to suit your tastes. So why not try it and see how much it can enhance your meals?

Ingredients

  • One ounce of chiles de arbol
  • One chile ancho or guajillo
  • One head of garlic
  • Salt to taste
  • 1/2 Tsp Mexican oregano
  • One cup of Olive, Vegetable, or Peanut Oil
  • 1/2 Cup of Peanuts (Optional)
  • 1/3 Cup Sesame Seeds (Optional)

  1. To prepare the chile ancho and chiles de arbol, it is recommended to remove their stems and seeds. If you prefer a milder taste, you can also remove the seeds from the chiles de arbol. The quantity of chiles de arbol can be adjusted to your desired level of spiciness, but do keep in mind that this salsa is meant to be very spicy.
  2. For this recipe, finely mince one head of garlic after peeling it. While you can use less, using a good amount of garlic will enhance the flavor of the dish.
  3. I suggest using a blender to blend the dry peppers until they have a powdery consistency.
  4. To prepare, take a medium pan and place it over medium heat. Add oil to the pan and wait until it is hot. To check if it's hot enough, insert a wooden spoon into the oil. If small bubbles form around the spoon, then it's ready. Remove the pan from the burner and add the ground chiles and garlic. Stir for a minute, then mix in salt and finely ground oregano. If desired, add nuts at this point. Keep stirring until the oil cools down, then transfer the mixture to your preferred bowl.
  5. Store the salsa in a glass container in the fridge for up to a month.

NOTE: For best results, lightly toast peanuts and sesame seeds before crushing them in a mortar or food processor.

    Tacos Envenenados - Poisoned Tacos

Yes, you read the title correctly! These simple but tasty tacos originated back in the early 1950s. Don Lauro from Zacatecas, Mexico (where I was born), first began selling his tacos in the streets of Zacatecas. Each time he was asked what was in the tacos, he would simply reply, Veneno, which translates to poison. My mom made these for us, but her recipe was a little different. Let me know what you think if you decide to make them.

    Discada for Tacos

Discada is a plate typically made on a large, concave metal disc called a disco. It's a very versatile dish prepared with different cuts of meat which usually consists of chicken, beef, pork, chorizo, ham, hot dogs, and veggies. The perfect dish to prepare for tailgating, birthdays, or any other occasion when you have a large crowd to feed. I especially enjoy this dish because the ingredients are never the same, and it can be prepared with ingredients you already have on hand. Add or take away ingredients to make it as unique to your taste and needs.
